Crispy and yummy cauliflower

Kids don’t like cauliflower. I was too one of those kids. But every time my mom had made it for us this way we ate and asked for more. It’s a crispy and yummy cauliflower recipe that everyone loves.

The nutrition profile of cauliflower is quite impressive, so let’s make the kids love it.

Boil the cauliflower in a salted water until you can stub it with a fork. Drain well and transfer cauliflower onto the baking dish. Make the mixture of 2-3 eggs, some fresh cream, leftovers of any kind of cheese, spice it well ( salt, pepper, turmeric, pinch of garlic powder ). Pour the mixture over the cauliflower. In the meantime, mix the breadcrumbs (regular or gluten free) with melted butter and pour it on top. The cauliflower loves salt, so make sure you put enough.

Place in a preheated oven at 180°C for 45 min, or until gets golden brown. Cover it with the aluminum foil to prevent the breadcrumbs from burning. I love making this in a glass baking dish, that way I can see when it gets yellowish.

It couldn’t be easier. Serve it accompanied by any kind of meat, or just with a huge salad. You’ll see, it’s a crispy and yummy cauliflower, somehow kids love anything with breadcrumbs and I’m sure they’ll love this too.

Well dear busy mums, here is one of the quietest recipes ever -Gnocchi al forno.

My friend came over for a late evening drink, and while the water for the tea was boiling I made a tomorrow lunch for the kids. She could not believe her eyes how quick it was.

Here it is – 5 minute gnocchi 🙂

Putt the frozen gnocchi in the baking tray. In a bowl mix eggs, any kind of cheese you find in the fridge (cottage, feta, cheddar, parmesan …), add some leftovers of ham or sausages – roughly cut. If you have you can add the handful of fresh spinach, season well. Poor on top of the gnocchi and put it in the oven, bake until golden brown.

Let it cool, tomorrow just transfer it to the lunch box, and add some more salad, cut if necessary and here it is.
